When I minimize Minecraft for a few seconds, it starts eating RAM like an elephant. Dropping me a message that I need to free RAM (rarely), having 16GB and 1GB dedicated to Minecraft...
This is happening in all versions starting from 1.8 (as I know).
Why is this hapenning?

Done (happens only when I enter in a random world and minimize de game. I can make a video if you want.

But the crash report doesn't say something of memory exhausted:
Memory: 213718048 bytes (203 MB) / 374460416 bytes (357 MB) up to 1060372480 bytes (1011 MB)
Please check if the instance of Java you're seeing is the one running Minecraft (show "path" in task manager)
Yes, the Java process in the screenshot is Minecraft. I can't do a manual crash because when I resume the game it is not responding, I have to wait a few seconds to do it (when the RAM lows to 850-900MB and the game works normally again).
I don't understand why is this happening. Think the people that only have 8, 4 or 2GB of RAM...

This sounds like an issue with the JVM, because internally you wouldn't even be able to allocate that much memory. Try manually changing the java version the client is using by going into the Edit Profile menu, and changing the Executable box to something like C:\Program Files\Java\<java version>\bin/javaw.exe
