.I can't get a hole stack anymore out my inventory. So I have to drag them 1 by 1 in my inventory, this is since the new update 1.11.2
What I expected to happen was...:

Just getting a hole stack (in creatieve) out the option menu into my inventory

Did you enable touchscreen mode ? See MC-5130
I can't get this to reproduce.
I am in creative and grabbing the slot with left mouse button. The stack now follows the mouse cursor. I click outside the GUI box with either left or right button and the stack always drops. What I cannot do in creative is holding a stack and only dropping one item.
