When making a custom recipe for datapacks if I use a oak log or plank in my recipe it wont work for any other type of wood.

Oak planks are exclusively oak planks post-flattening.
Use the tags system instead; check the snapshot announcement for more info (and e.g. the stick recipe for an example).
