Colors in Signs unreadable for some players

for some players, signs with colored text appear as normal, as shown in my screenshot,

but for some others it's almost unreadable, as shown in the screenshot of a video

this is not caused by the video because in some videos the sings appear normally and you can also hear the youtuber complain about the text being hard to read
