Seeds don't grow, rather generate new blocks to grow in.

Planting/Growing seeds creates blocks roughly 30 blocks away where the seeds then grow. This also applies to grass. As an island, blocks were generated at sea where the crops were planted and growing. Bamboo breaks itself and replants itself at this location as well.
