I cannot remove saddles from horses, which is a pity since I do not want to produce one saddle for every horse or have my horses standing around in nature with saddles.

I don't know, since horse saddles can be crafted and horses can look very different while pigs all look the same. By the way "horses and saddles" allows more logic than "pig and saddle", I guess.

I'm pretty sure this is not a bug, as in no previous version you were able to remove any kind of saddle.
This is more of a suggestion, but I still agree. 🙂
