If villager spawned with generations process it won't apply ANY profession in contrast to spawned by a player
How to reproduce:
1.Find a Village
2.Try to trigger profession apply on local vilagers
3.Not working! Spawn your own villagers
4.Working only with spawned by you

Confirmed. Villagers that have been naturally generated (I only tested plains villagers) don't seem to execute any AI tasks at all.
