Sometimes when I break blocks they have a tendency to respawn where they were.

I have been having the same issues. It doesn't matter what I am mining. The block entity drops seem to stop for a moment and then all of a sudden the block respawns back where it was. It is almost as if it turns back time for just a second or two. It happens several times in an hour's time. sometimes it can get quite frustrating.
