Also they don't emit anger particles when destroying their job site block. Altough they should according to the official minecraft wiki.

this video explains everything but i still think that the new villager system is strange. Like how do they register a job site block so far from them while not even seeng it.
Did you trade with them before? After completing a single trade with a villager they won't lose their profession even if their block is broken
