Today I played with friends on his server and I experienced huge lag when buildig blocks. I recorded this footage using shadow play and this records on 30fps. in this footage you see the escape menu opening very quickly and closing right after. This does not appear when playing the game normally because I easily get over 300 fps. This also only occurs on multiplayer not on a singleplayer world.
I also don't have any macro's bind or anything.
These my specs:
I7 6700k @ 4.7 ghz
1060 O 6gb
16 gb ram (with 8b loacated to minecraft)
Here's a link to the video showing what happens:

I hope someone has an idea whats happening, this only started occuring since 1.14.

@violine1101 I tried turning of the entire nvidia overlay including shadowplay. And this did not fix it. I also have only one instance of minecraft running.

Here's another video. It occurs when destroying the block and when placing. It's really annoying cause the game just freezes for 0.2 seconds every time.

I am currently having this exact same issue. Only occurs on a Minecraft realm/server and not at all on a single-player. It started with the 1.14 update and I haven't had any performance issues prior to the update. I have tried many fixes for myself but none have worked.
The issue occurs the most with cutting wood and breaking leaves. The worst lag out of all of it comes from breaking bamboo.
Hmm, with that many fences and leaves there, this is probably caused by MC-123584. Resolved as a duplicate of that ticket.
This sounds like an issue with Shadowplay. Can you test if disabling it helps with solving the issue. Also, do you have another instance of Minecraft running simultaneously?
