The chunks should load fairly well with my 32GB of RAM, but I'm experiencing several chunk errors while exploring the world.
To replicate:
Explore new places; old ones do it too however new environments cause it the most.

Also, 32 GB of RAM is overkill and will probably make your game run slower. Vanilla should never need more than maybe 3 or 4 GB.

I do video editing on the side. Would it be better to only allow 8GB to be used by the game?

I'd recommend either 2 GB or 4 GB unless you're using very high-definition resource packs and/or mods.
