Villagers with their workstation in front of them reset their profession instead of restocking, resulting in that villager loosing his trades and getting new ones. When this happens new villagers claim that workstation ending with 2 villagers from the same profession with only 1 work station.

I confirm this still to be the case in 1.14.1. It's true that the villagers "keep" their profession but they don't go to their workstation and some other villager takes their place as that profession. So esentially that villager will never loose his profession and will never re-stock.
Same here, started a new world last week right before the release of the 1.14.1 version and keep having the same problem. Also, those "stationless" villagers never seem to follow their schedule nor getting into their beds and just scatter in the outskirts of their village, taking the iron golems with them
I'm seeing this as well. I've seen what the reporter is seeing, where one villager will reset his profession and another villager claims the workstation, leaving two villagers linked to the same workstation and only one will restock.
I'm also seeing a variant where a villager will reset his profession/trades instead of restocking, but no other villagers claim the block or are involved. For example, I had suspected this happening so I named a villager with a namtag, "Farmer". I traded with him until he was a master farmer. Several minecraft days later I came back to trade with him, he was still named "Farmer" but he was now a novice with different level one trades and everything else gone.
Confirmed to be affecting 1.14.2 as well.
I have the same issue. I have six librarians and all loose their profession. One of them pick a Brewing stand and ending with 2 villagers from the same profession with only 1 work station.
The villagers with whom I have traded seem to keep their profession. But they not restock.
