Villagers can find workstation in small spaces but cannot restock and may randomly lose "sight" of the POI entirely.

Villager places in a 1x2 space that is 2 blocks high and placed next to a workstation can find the workstation and obtain a profession, but after trading until locked it will be unable to restock and another villager may take the workstation.

To reproduce place villager in a 1x2 space with workstation. Make some trades until locked. Wait to see if it restocks. If it doesn't restock try placing another villager outside of the box and you may see that the new villager will take the workstation.

Since they were able to find the workstation initially to obtain a profession then they should be able to still see it and be able to restock.
