Most villagers trading interface disappears after a short blink, not usable.
Some villagers will still trade normally.
Have not found a pattern to which villagers will or won't trade.

Only two villagers in village. Can open trade fine with one but not the other. Both Shepherds.

Close game and reloaded and now issue gone. Tried that before and it didn't work but letting you know it finally resolved.
I've looked into it and have found that this is a reoccurring issue caused when a villager that has been traded with loses its workstation. Once lost clicking on the villager will open the GUI for a split second and then close. Placing back the workstation will allow you to trade again as normal.
