as soon as I login to my single player game all my villagers are gone. I tried to restore from backup and it happens again when I login again.

I'm having the same issue and I've done a little testing.
I've found that any villager, either naturally spawned or cured, with an assigned profession disappears when updating. I kept some without jobs for a test, and they stayed while the others vanished.
