Trying to do the Mending book trade (2nd trade from the top), put the emeralds in, isn't letting me do the trade. There is no red X, and the villager's workstation and bed are nearby and accessible. Tried relogging multiple times, breaking and replacing the workstation/bed. Any known fixes to this, or is it just broken?

You need a book for that trade as well as the emeralds.
