I noticed that when I placed a signpost on a chest and tried to type something where i needed the space out words, the game would exit out of the signpost, finishing the signposts writing and causing the character to jump.

the list players button or tab specifically? as my tab is used as crouch and ` is used as player list
Have you pressed tab before? That will select the "Done" button (which will then be clicked when pressing spacebar).
