I'm not sure if it just happens to me, but whenever a device is disconnected (I have a faulty usb port), my game crashes completely, making me have to create a new desktop and close the game via task manager.

Please force a crash by pressing F3 + C
for 10 seconds while in-game and attach the crash report (minecraft/crash-reports/crash-<DATE>-client.txt) here.
We do not have enough information to find the cause of this issue.
