I tried to make I villager trading hall but then I noticed that when I tried to change a villagers trades and break the block they kept their profession instead of changing to unemployed but when I placed the block back down another villager got that profession which got very annoying because they wouldn't change professions

We're actually already tracking this issue in MC-153617, so I've resolved and linked this ticket as a duplicate.
That ticket has already been resolved as working as intended, which means this is not considered a bug and won't be fixed. Please do not leave a comment on the linked ticket.

Did you trade with that villager at any point before breaking the workstation? Because if you did they won't change their profession, otherwise this is a bug
