Oak trees can grow big even with blocks above them.
When tree's grown it replaces blocks with tree trunk and branches. Even bedrock
Easiest way to reproduce - use ilmango's "Fast 4 Type Tree Farm (Acacia, Spruce, Birch, Oak)" with oak saplings

I guess that Minecraft won't detect whether there is a block above the Oak Sapling anymore but only a detection based on probability. So it won't prevent the Oak Sapling grow into a Large Oak Tree if any blocks exist above it, and if so, the Large Oak Tree will replace the block no matter what is it, even the Bedrock
