The last edit before the glitch was on Saturday 16 May at approximately 17:30 South African time. We discovered the glitch at about 16:45 SA time, Monday, 18 May. The chunks had been rotated up to about 90 degrees to 270 degrees and they were all out of place.
This is the recreated world with no glitch and no builds. All chunks are in the correct place.

We're actually already tracking this issue in MC-161823, so I resolved and linked this ticket as a duplicate.
