water air blocks

so, i was playing in a survival normaly waiting for a friend to enter, i was preparing some place to farm, wile moving water i look that some of they stays remeaning as a air block, and do not refill automaticaly ( as they always does ), i triying to recreate that i look that its because i grab water an turn almost instantly
