What I expected to happen was...:
I expected that once I started with the eating animation, in the portal, the animation would be canceled once I went trought the portal.
What actually happened was...:
After I went trought the portal, the animation did stop, however upon clicking on the food item in my hotbar again, instead of playing the animation, the food was instantilly consumed.
Steps to Reproduce:
1. Make a nether portal
2. Upon entering the portal wile hungry, just before being teleported beging to eat the food item.
3. After exiting the portal, be it on the nether or overworld, the food item will be consumed without the animation. Depending on how close to the ending of the portal teletransportation you are, it is possible to skip parts of the animation.

Forward-resolving to MC-212926
After some more testing, I determined that you can indeed run, sprint, jump normally after you exited the portal, and still consume the food item, as long as you don't change into another item on your hotbar, it will be auto-consumed once the normal time for the animation to finish has passed, like the inventory re-loads in half life.
