The MLG water trick takes a lot of practice because you need to get the timing just right. It can also very easily fail you because of lag (which I suspect is what happened here considering your frame rate).

Your Minecraft version is outdated. We currently take issues for version 1.16.2 and the latest snapshot.
Please update to the latest version as it includes the newest fixes. If you still have this problem after updating, then please create a new issue.
In case of a game crash, please also attach the crashlog.
