When you try to name a saddled pig on Survival Mode, the name tag is not actually used... it desappears from the inventory, but it comes back if you move your mouse over the slot it was, or if you open a chest. Also, even if the pig's name actually appears, when the chunk is reloaded, it is not there anymore.
