Endermen spawn during daytime

I was testing out the new 1.17 snapshot when i stumbled in to two endermen standing in complete daytime in a mountain biome.

They were most likely spawned in the night and had yet to despawn.

Most unlikely. The world was brand new and it was in the first like 2 minutes of playing that i found them. The first night had not came to be yet.
