I have Minecraft Java Edition for macOS, and the RSHIFT does not do its purpose, it is supposed to work like LSHIFT, but not make you go down.

I do use LSHIFT to crouch, but RSHIFT is supposed to not open up the item's menu and be able to place blocks on hoppers without having to crouch...

If you rebind the sneak key you will notice that the "not open up the item's menu" button is always bound to the sneak key, not the shift key specifically, so this is invalid.

Just to let you know, only one button can be assigned to one control. For example, if you use Left Shift to crouch you are unable to press any other button to crouch. I believe, crouching by default is bound to Left Shift so this answers your question on why you unable to use Right Shift to crouch.
