[MC-209325] Villagers don't take their profession

I tried to give my villagers a profession, but they didn't take it, even when its working time.

@Avoma No, I played Minecraft Java 1. 16. 4. with the mod OptiFine, but i think that doesn't change anything about villagers.

In that case, this report is invalid as this issue occurred whilst using a modified game version. Optifine is not support by Mojang and bug tracker only handles issues relating with Vanilla Minecraft (unmodified game versions). If the issue persists without the use of modifications, feel free to make a new report.

Please provide a video with the debug screen enabled (hit the F3 key) demonstrating the issue.
