So I've just created a villager breeder that is linked to a trading hall. However, it seems that it takes a VERY LONG TIME for the villagers to accept the profession even though I am replacing their workstation within the working hours. They seem to accept the profession after 3-5mins which is an absolutely bad experience since I've never had this problem before, just today. I've tried replicating the scenario in Creative Mode but still does the same thing, and I am only playing locally.

I've never had issue with the villagers not accepting profession while in a minecart, I have been using this design for a trading hall since 1.15 and only now did this happen.
Well, the thing is that on my ssp, I have a trading hall with villagers in minecarts who quickly take trades and stuff, but on my smp with 2-3 players, villagers in minecarts are refusing to take any trades. They were earlier taking trades, but now they’re not. I suspect this could be because of lag, since about half an hour earlier, I had set random tick speed to 1000 for 5-10 minutes and there was some lag at the time, but then the server stabilised. That possibly messed with the villagers.
The villagers in your screenshot are in minecarts. Note that villagers need to be able to reach / pathfind to a workstation in order to change their profession. Is the issue still there if the villagers are out of the minecarts?
