I have gone around the whole spawn area but I have not found a single iron ore.
then I used cheats to delete stone from a 50X50X50 cube quite some times
but I have no iron ore at all

The screenshot shows you are in 21w08a. Please move to the latest release, 21w08b, which specifically fixed this issue.
