I had a similar issue in the previous snapshot - leaving a rejoining the world fixed it for me. I remember seeing that it was possibly a spawn protection in singleplayer bug?
It may not be your specific issue, but I'd give it a try

It is definitly not spawn prot because I teleported myself to 10000 on x and 10000 on z and spawned somewhere in the hundreds.

I rejoined my world and I still couldn't place blocks or open chests.

No that is not the issue.

That sounds like the server might have crashed.

I changed my key to place blocks to c and forgot about it. Everything is working just as expected.
