Literally glow squid's {NoAI:1b} doesn't work
/summon minecraft:glow_squid ~ ~ ~ {NoAI:1b}
/summon minecraft:squid ~ ~ ~ {NoAI:1b}
They don't work!

Actually the NoAI works fine for them. Your experiencing MC-65664 hence why the Glow Squid & Squid are falling. That report was marked as Works as Intended so it is not considered a bug.
