3 players on our server managed to get INT_MAX cm by elytra in regular play.
Since this stat is tracked in and INT (not a long) it is possible to get to this max in survival.

True, but this was done on a server that was only up during 1.16 and none of the other stats (such as playtime) hit max

Just to note, of course this is also true of every other distance statistic. On any long-lived server it's pretty easy for this to happen even without elytra.
