A creeper wandered into my house and blew up a chest full of items. At that very moment, I lost my entire GUI - my health meter, my armor bar, my hotbar, my level, everything. I'm now unable to switch to any item at all. Closing and reopening the world does not help.

You accidentally pressed the hide GUI key (I think it's F1 by default?). Trust me, I've done that when jumpscared too many times to count....
Anyways, just press F1 again and it will come back.
