I play using 1.17.1 but my textures are stuck on 1.15. How do I change this?

I'm playing on Java edition 1.17.1 but my textures are not the 1.17.1 version. I think they are the 1.15 version or earlier.

What I expected to happen was...:
I'd like my textures to be 1.17.1

What actually happened was...:
They aren't

Steps to Reproduce:
1. It's as soon as I open the game. I've tried uninstalling and installing several times.
