I'm unaware if this affects all version of Minecraft, or if it depends on what you're playing it on.
But, if you join a world, then unplug whatever should be in the audio jack, there will no longer be audio. You may plug back in the same device and it still will not work. Doing F3+T to refresh the textures works, as well as relaunching the games, but this may be quite annoying for some people.

Maybe closing and opening will fix it. It may just be the headphones stop working and not Minecraft. 😃
