My account has a few worlds in it for different kids in our house and one of it has a large chunk of world missing where my daughter built many things on. I don't play the game and I don't know much about gaming either so I don't know what to do to help my daughter recover it.

Hmm. This is odd, this kind of terrain would usually only happen if the world was edited in 3rd party software. Are you sure that none of the other kids messed with the world in that way?
Unless you have made backups of the world there's unfortunately no way to recover the lost parts of the world. Sorry.
Java version is irrelevant here.
Wait... Since 21w16a (1.17) you need Java 16, so you shouldn't be able to run 1.17.1 on Java 8
