if i want to craft something i must hold my mouse button rather than click

Does your mouse work properly? I never heard this before...

might need a little more info: does the craft GUI close automaticaly if you don't hold down the click or something?

Is touch screen mode on?
options -> controls -> mouse settings -> touchscreen mode

As already said, this is probably touchscreen mode. Please check whether that is enabled.
