In 1.18 and 1.18.1 the camera acts as if its sensitivity is jumping all over the place.
What I expected to happen was...:
Camera movement that is actually manageable and smooth.
What actually happened was...:
The camera movement sensitivity is jumping all over the place, making minecraft unplayable at random
Steps to Reproduce:
It just happens randomly as I play the game in 1.18 and 1.18.1
Additional info:
I usually have windows mouse acceleration off. I tested to see what would happen with it on, it makes it worse.
I have tried setting windows mouse sensitivity to every tick on the bar, does not fix.
I have set my mouse poll rate to 125, 500, 1000, 2000, 4000 and 8000, none of them fix the issue.
I have tried multiple thousand different dpi settings ranging from 100 to 20,000 on my mouse, none of them fix the issue.
This gives me reason to believe it is a bug in the game, and not with my mouse settings.
The in game camera sensitivity also does not fix the issue.
It it usually at its worst if I am not moving. If I am moving or have recently moved it slightly helps, but not enough for the game to be playable.

I have tried both that I own. one is a razer death adder and the other is a razer viper, both of them have this issue in the game.
Also I have to tell you, if its only in ONE game, its not an issue with my mouse, its an issue with said game and how it interacts with it, also known as a BUG....
EDIT: It also does not happen in any version of minecraft before 1.18. The 1.18 prerelease, snapshots, 1.17, 1.16 etc, no issues.
EDIT2: I am not entirely sure why, but it stopped in windows 11. When I reverted back to 10 the issue camera issue started up again.
I think i also am having a similar issue, but for some reason, it only happens when I load into a world, for the first time after I open Minecraft, and pressing the escape button and clicking with my mouse mixes it until quit Minecraft and reload the world
I do not have any issues with the sensitivity in any of the 1.19 versions.
I adjusted all the windows settings and dpi settings and nothing reproduced the issues I had in 1.18. It looks to be fixed.
This is odd, I guess I have two accounts on this somehow cause its same picture... this site is confusing.
This might be a hardware issue. Have you tried using a different mouse?
