The player inventory view shows a rendering of the player's avatar, including any armor which the player is wearing. Arrows (aka projectiles) which have hit the player are also rendered here just like they are rendered in-game. When the player dies the arrows are removed from the player after respawning but are not removed in the player inventory view. I waited over an hour but the arrows never got removed.

No, I am not using Optifine or any other client mods. I was playing on a Paper server when I first noticed this, but I did some testing for you this morning to confirm that this has nothing to do with Bukkit / Spigot / Paper or any server plugins.
I started up a singleplayer world in vanilla Minecraft this morning and opened the world up to LAN so that I could test with two players. I then shot one of the players using a standard bow and arrow, without any enchantments, until the player died. Shortly after respawn the player did not have any arrows on them in game, but once again the arrows did show up in the rendering of the player in the player inventory.
Just to be clear, the player inventory view can be opened by opening the player's inventory, and while open, this view includes a rendering of the player. It is this rendering that incorrectly shows the arrows still on the player.
This is definitely a bug in Minecraft, and I am able to consistently reproduce it on version 1.18.1 in both singleplayer and multiplayer.

I was unable to replicate the described issue. After dying with arrows stuck in my player, the arrows were removed both in-game and in the inventory view. (Screenshots below)

When I went to record this morning the bug was not happening in either singleplayer or multiplayer. I was able to reproduce it when I created this ticket, and when I posted the first comment on this ticket, but as of today it looks like this issue is no longer happening. I'm assuming this was fixed elsewhere, either intentionally or unintentionally.
In any case this ticket can be closed. Thank you to everyone who spent time on this. The whole community is very appreciative of all the bug fixes! Keep up the great work 🙂
Could not reproduce in 1.18.1. Where you using Optifine or any other game modification?
