When I open Minecraft Java edition, I double-check that I'm on Minecraft 1.19.1 (not the snapshot), which is the time of writing this issue, and whenever I try to join mc.fruitservers.net, the error message it gives me is "Incompatible client! Please use 1.7.2-1.19". It's the same problem with DonutSMP.net. If I try to join, it tells me the same error message. Except, if I go to the starting page, where it shows the options, "singleplayer", "multiplayer," "minecraft realms" and all that, it shows on the bottom left corner that I'm on Minecraft 1.19.1. It gives me the same message when I try to join Minehut, Hindrix and I'd say about 90% of all servers are unjoinable due to this bug. If this doesn't get fixed, I may as well quit Minecraft. Everything was working the day before typing this issue. Mojang, please fix this.

I'm pretty sure there's a problem on the servers' side, not on Mojang's. It takes some time to upgrade a server with lots of plugins to a newer MC version. You should still be able to join it with version 1.19, until they upgrade it to 1.19.1. (The message 'Please use 1.7.2 - 1.19' doesn't yet include 1.19.1)
Likely the servers haven't updated yet.
