Villagers can only claim beds if they're able to pathfind to them. In the video you've provided, there's no way for the villagers to reach the bed therefore none of them can claim it. Please check if allowing villagers to pathfind to beds resolves this issue for you.

Pathfinding is a bit funky with trapdoors - try whether it works when removing the trapdoors and replacing them with regular blocks or air, respectively.
