To copy NBT data, ctrl and middle click. When doing this with chests, barrels, and etc, it copies their contents into an item which when placed down, has an exact copy inside.
Chiseled Bookshelves copy the amount of books within the shelf, but do not carry the texture over unless a book is removed/added.
Copying NBT should show the texture, would be useful for creative builders.
