So, put simply, there's a couple of pixels on the horse model that are occupied by two separate textures and has a overlap when both are used at the same time - in other words using the saddle and any armor at the same time causes this visual bug.
see attached images for more info, pixels in question are bright red, i have tested this with vanilla textures as well and it's the same result.
