I have experienced this issue in the past before. Currently, I am unable to reproduce it again, but would like to investigate further.
Can you provide some information on your computer setup? Some immediate information which would be helpful is:
Your Opperating System (OS)
Your CPU
Your GPU
Your graphics drivers, and version (For instance; AMD Adrenaline, or Nvidia GeForce)
Additionally; please make sure you are in a vanilla enviornment when you experience this bug.

I am encountering the same issue.
Whenever I put the polling rate of my pro x superlight 2 on anything higher then 125hz, the game becomes unplayable.
When on 125hz I can still notice a slight stutter, but it is more playable. When on anything higher, it looks like my input is kinda laggy but also on a super high sens.

haql_ glad to see someone else can reproduce this issue. Also for context i play on a laptop much worse than haql_ 's pc and he can reproduce this hardware is not the issue.
This issue has been existing now for many years. I found a detailed post about this issue from 2017 on the minecraftforum website.
Mouse Speed/Sensitivity Erratic
I have been unable to reproduce, it is most likely the pc/laptop hardware being slow/outdated. Please add your operating system to the bug description.
I am using a m1 mac air 2020 with a g502 hero wireless at a polling rate of 1000 hz, and I have never had this issue.
