Contrary to MC-257082, which appears to have been resolved inadvertently. It seems Mojang deemed initiating sprint while riding an entity unnecessary, thus they eliminated the ability, except for camels. However, sprinting while mounted on entities isn't futile as it enables knockback attacks against mobs. This implies that whenever you aim for a knockback attack with increased force while mounted, you must dismount and then remount the entity while sprinting. Remember that initiating a knockback attack by attacking an entity interrupts sprinting, necessitating you to start sprinting again for subsequent knockback attacks.

Summon a boat
Summon a mob
Mount the boat
Attempt to execute a knockback attack on the mob by sprinting
Observation: It's not possible to initiate sprinting for a knockback attack.
Expectation: You ought to be capable of initiating sprinting for a knockback attack.

This is a feature request per MC-257082.
Sprinting whilst riding entities was a bug, therefore any change to this is a request for a new feature.
I don't suspect this is a bug and I personally think that this feature is working as intended by development. Not being able to sprint while on an entity such as a boat makes logical sense imo.
