If the gamerule doMobgriefing is set to false, villagers are unable to pick up items to breed (i.e. carrots, bread, potatoes), and piglins are unable to pickup gold to trade.

This issue is a duplicate of MC-3370 and, unfortunately, is intended behavior. However, for piglin bartering, you can still right-click with a gold ingot.
