With a custom datapack with a custom language, it is possible to rename everything with lang.json. However, it is impossible to rename the description of a disc, regardless of a custom language or an existing language.
I watched a video and the youtuber mentioned the bug. In either my old way or his way, I encountered the same bug.

We're tracking this issue in MC-272378, so this ticket is being resolved and linked as a duplicate.
That ticket has already been resolved as invalid, because the translation string has been updated to jukebox_song.minecraft.<disc_name> instead of item.minecraft.music_disc_<disc_name>.desc
