Sooo, I was just making a staircase through water using glass, and saw an image of different block textures flash on my screen. I have NO idea what caused it or how it happened, but it genuinely scared me.

You state you have datapacks enabled, do you have any resource packs or mods enabled as well? If so, please disable those and see if the issue is still present.
