I don´t see the new cow, chicken or pig skins even after reloading chunks

maybe try to go far from places you’ve been and find those mobs there (also, remember that new types of those mobs spawn in specific biomes)

You'll have to search newly generated chunks or lower the amount of passive mobs until it's below the passive mob cap.
